  • 1 tsp sugar
  • ½ lime (juiced)
  • ⅛ cup red apple vinegar
  • 2 cloves garlic (minced)
  • 2 medium green onions (chopped)
  • ½ tsp salt
  • 1 tsp fresh cilantro (chopped)
  • ½ tsp ground black pepper
  • 10 flour tortillas (6 inch)
  • ¼ cup lettuce (shredded)
  • 1 tomato (diced)
  • ¼ cup salsa
  • ¼ cup Monterey Jack cheese (shredded)

Instructions

  1. In a medium-sized saucepan, sauté the cubed chicken over medium-high heat for about 20 minutes until cooked through.
  2. Add sugar, lime juice, red apple vinegar, garlic, green onions, cilantro, salt, and pepper to the pan. Reduce heat and simmer for an additional 10 minutes.
  3. Preheat an iron skillet and warm each tortilla for about 30 seconds on each side.
