- 1½ lb yellow squash
- 1½ lb zucchini
- ¼ cup butter
- 2 cups diced sweet onion
- 3 cups corn kernels
- 1½ cups shredded white cheddar cheese
- ½ cup sour cream
- ½ cup mayonnaise
- 2 eggs
- Seasonings (salt and pepper)
- Fresh breadcrumbs
Instructions
- Preheat your oven to 350°F and spray a 9×13-inch pan with cooking spray.
- In a large skillet, melt butter over medium-high heat. Sauté sliced squash, zucchini, and onion until tender (about 10 minutes). Add minced garlic and cook for an additional 2 minutes.
- In a mixing bowl, combine the sautéed veggies with corn, cheddar cheese, sour cream, mayonnaise, eggs, salt, pepper, half of the breadcrumbs, and half of the parmesan cheese.
- Spread the mixture into the prepared baking pan.
- Combine remaining butter with breadcrumbs and parmesan; sprinkle over the casserole.
- Bake uncovered for 45-50 minutes until golden brown.
