Description

Zucchini Squash & Corn Casserole is a warm, hearty side dish that perfectly blends the flavors of fresh zucchini, sweet corn, and creamy cheeses. Ideal for any gathering, this delightful casserole offers a comforting taste that appeals to both kids and adults alike.


Ingredients

  • lb yellow squash
  • lb zucchini
  • ¼ cup butter
  • 2 cups diced sweet onion
  • 3 cups corn kernels
  • 1½ cups shredded white cheddar cheese
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 2 eggs
  • Seasonings (salt and pepper)
  • Fresh breadcrumbs

Instructions

  1. Preheat your oven to 350°F and spray a 9×13-inch pan with cooking spray.
  2. In a large skillet, melt butter over medium-high heat. Sauté sliced squash, zucchini, and onion until tender (about 10 minutes). Add minced garlic and cook for an additional 2 minutes.
  3. In a mixing bowl, combine the sautéed veggies with corn, cheddar cheese, sour cream, mayonnaise, eggs, salt, pepper, half of the breadcrumbs, and half of the parmesan cheese.
  4. Spread the mixture into the prepared baking pan.
  5. Combine remaining butter with breadcrumbs and parmesan; sprinkle over the casserole.
  6. Bake uncovered for 45-50 minutes until golden brown.
